Thrive and Shine Smoothie

This smoothie is energizing, hydrating, and packed with whole-body support—perfect for a reset or just a great start to put some THRIVE into your day.

Ingredients:

1 cup frozen mango chunks
1/2 cup fresh or frozen strawberries
1/2 frozen banana
1 tablespoon chia seeds
1 tablespoon almond/ peanut  butter
1 Small handful spinach or baby kale
1/2 cup unsweetened almond milk (or coconut water)
1/2 cup water
Juice of 1/2 a lime
Optional: 1/2 teaspoon maca powder or a scoop of your favorite clean protein powder

Instructions:

Blend all ingredients until smooth.
Taste and add more lime or water as needed.
Pour, sip, and let your body start to thrive and shine!

Pro Tip: Add a few fresh mint leaves or a slice of ginger for an extra zing.

Double Chocolate Banana Almond Mini Muffins

I love when my fellow Chefs, health foodies, and plant forward pioneers make some awesome treats to share. Here is one of my faves. The fact that they are mini, helps with the portions sizes and you can also share ( if you can!)

VEGAN, GLUTEN FREE, DAIRY-FREE

Serves: 24 mini muffins

INGREDIENTS

  • Wet Ingredients
    • 3 medium, very ripe bananas
    • ¼ cup melted coconut oil
    • ¼ cup pure maple syrup
    • 1 flax egg (1 tablespoon ground flax + 3 tablespoons water, whisk together, set for 10 mins)   or 1 egg beaten

  • 1 tsp vanilla extract


Dry Ingredients
• 1 cup gluten free oat flour
• ¾ cup almond meal
• ½ cup unsweetened cocoa powder
• ¾ teaspoon baking powder
• ½ teaspoon baking soda
• ¼ teaspoon salt

Add-ins
• ¼ cup vegan mini chocolate chips
• ¼ cup sliced almonds, chopped
Optional for topping
• 1 tablespoon each: vegan chocolate chips and sliced almonds, chopped

 INSTRUCTIONS
• Preheat the oven to 350°F. Line a 24-cup mini muffin pan with mini muffin liners.

• Add peeled bananas to a large mixing bowl. Using a sturdy whisk or fork, mash bananas until smooth. Add coconut oil, maple syrup, flax egg, and vanilla. Whisk until well incorporated.

• Add the dry ingredients: oat flour, almond meal, cocoa powder, baking powder, and baking soda. Whisk together until just incorporated, making sure no flour patches remain.

• Using a spoon or cookie scoop, drop batter evenly into muffin cups (about 2 tablespoons of batter per muffin). Optional: sprinkle chocolate chips and almonds on top of the muffins.

• Bake for 16-24 minutes. Mine took 19 minutes. Allow to cool on a cooling rack for about 1 hour. Lift out and enjoy!

Easy 3 ingredient Banana Pancakes

Ingredients

  • 2/3 cup oat flour

  • 4 organic free range eggs

  • 2 medium ripe bananas

  • Optional add ins: 1/2 teaspoon of cinnamon, 1/4 teaspoon salt, 1-2 tablespoons hemp hearts

  • Avocado oil ( for cooking the pancakes)

Instructions:

  • Mash banansa until smooth. Add eggs in and whisk until both are incorporated.

  • Add oat flour and any add-ins and gently combine. ( you can prep ahead to sit out up to 1 hr if needed)

  • Preheat skillet ( non stick or cast iron)

  • Add a small amount of avocado oil (wiping with a paper towel) if you think your pancakes will stick to your surface.

  • Scoop approx 1/4 cup of batter onto the hot skillet ( leave room for other pancakes to expand)

  • Cook pancakes until small bubbles appear on the top, then flip for another 1-2 minutes.

  • Continue cooking in batches. You may keep the others warm in an oven at 200 degrees.

  • Enjoy topped with bananas, berries, yogurt, maple syrup, or just plain ( great with my Super Chia Seed Jam )

  • Can be stored in the refriderator for up to 3 days
