Chocolate Dipped Delights

When you're craving a bit of chocolate with a mix of healthy, this is the perfect pair!

Ingredients:


1- 2 lbs of mixed fruit of choice ( make sure they are dry and almost to room temp)

1 cup chocolate (60%+ cacao chocolate chips)

1-2 teaspoons coconut oil ( I have also done this w/ out the oil)

Instructions:

1. Melt the chocolate, You can use a double boiler or the microwave.

2. Microwave method : Melt the chocolate in 20-30 second intervals stirring a few times. Heat small amounts at a time to prevent clumping.

3. Double boiler method: Use a glass or stainless steel bowl over a pot of simmering water (Keep some space between the water and the bowl) Stir frequently as the chocolate heats up.

4. Dip fruit into the melted chocolate. Lay it on a parchment or wax paper-lined baking sheet.

5. Refrigerate for 15-20 minutes to set up the chocolate. 

6. Serve chilled

Ingredients

  • 1-2 cups unsweetened almond milk or plant based milk of choice .

  • 1 scoop plant-based protein powder (optional)

  • 1 tablespoon ground chia seeds or ground flax seeds .

  • 1 cup blueberries, raspberries, strawberries or a mix (frozen works best)

  • 1 banana (tip: freeze some peeled bananas for making your smoothies. I always have plenty on hand)

  • 1 tbsp of almond or peanut butter (optional)

  • Desired toppings ( Goji berries, extra frozen blueberries, coconut, sliced almonds , walnuts etc)

Add to blender and blend until smooth. Pour into a frozen/ chilled glass. Add toppings. ENJOY!!

Overnight Oats

For a quick AM breakfast or “on the go” breakfast, add ingredients the night before in a glass covered jar or container and refrigerate. In the AM you will have breakfast ready to go.

Here is my personal favorite.

Ingredients

  • 1/ 2 cup raw oats (quick or regular)
  • 1 cup unsweetened almond milk
  • 1/2 tsp chia seeds
  • 1/8 tsp hemps seeds
  • 1/4 tsp of vanilla extract
  • 1 tsp maple syrup

 

  • optional add ins: 1 tsp nut butter or 1/2 tsp cacao powder.

In the morning, add in your extras like: 1 tbsp. chopped raw walnuts/ almonds/ or choice of your favorite nuts or seeds fresh berries, Goji berries, banana, shredded Coconut, or seasonal fruit of choice
