Kelp Noodle Slaw

INGREDIENTS

  • ¼ cup green cabbage

  • ¼ cup red cabbage

  • 1 package of Kelp / or Green kelp noodles (may cut into 1 in pieces if desired)

  • 2 carrots peeled and shredded

  • ¼-1/2 cup Extra virgin olive oil

  • ¼ cup Apple cider vinegar

  • 2-4 Tbsp of Raw agave nectar

  • 1 inch grated ginger

  • add some mustard or lemon and salt & pepper to taste

METHOD

  1. Soak up the package of kelp noodles in a few pinches of baking soda and cover with water for a few hours if you like them on the softer side (which I do) but if you'd like them crunchy rinse them out of the package and serve that way

  2. Put shredded cabbages, noodles and carrots into a bowl and mix

  3. Place vinegar, oil, agave, ginger and blend in blender and blend up

  4. Pour over the slaw, chill and enjoy
